
Fixing the Temperature Dip in Convection Ovens
Ever notice how a convection oven just… dies… the second you open the door? Or when you slide in a huge tray of cold food and the temperature craters? Standard heating coils are slow. They try to heat the air, and by the time that air actually gets back up to temp, you’ve lost precious minutes. That’s why we use far-infrared (FIR) elements. Instead of waiting on the air to move, these things beam heat directly into the food. It’s a huge difference. Stopping the “Swing” Here’s the thing: standard thermostats are kind of clumsy. They often overshoot the mark, leaving you with a wild swing between too cold and too hot. To fix that, we use a PID control loop. Think of it as a smart brain for the oven. It watches the temperature every millisecond. The moment it feels a dip, the FIR element kicks in. You get an instant burst of radiant heat that hits the surface of your product immediately. No waiting around for the air to warm up. Getting the Power Right Of course, you can’t just throw any element in there. We pick the wattage based on how big the oven is and how much heat you actually need. More wattage means you recover your temperature faster. Just a heads-up, though—your power supply needs to be able to handle those sudden spikes in current. And be careful not to go overboard. If you put too much power in a tiny space, you’ll scorch the top of your food before the convection air even has a chance to do its job. The Trade-offs Now, FIR elements aren’t magic. They don’t replace convection entirely. Since radiant heat travels in a straight line, you have to be smart about where you put the elements. If you’re not careful, you’ll end up with “cold spots” where the heat just doesn’t reach. Also, these tubes are a bit more delicate than those heavy-duty armored coils. If your crew is sliding heavy metal trays right against them, they’re going to snap. We use protective guards to keep them safe. The best part? The infrared waves pass right through the guards, so you get the heat without the heartbreak of a broken element.
