Usually, it happens because standard convection air just strips the moisture off the surface before the middle even gets warm. We deal with this by using infrared (IR) bulbs. Instead of relying on the air to carry the heat, these bulbs shoot energy straight into the food. It’s a more direct hit, which keeps the juices where they belong. The secret is in the heat density. A couple of things to watch out for Now, IR heating is powerful, but it isn’t magic. Because it creates such intense heat in one spot, you’ve got to keep your vents clear. If the air can’t move, heat builds up around the socket. That’s a fast track to fried wiring or a dead bulb. Also, do yourself a favor and wipe down your reflectors every few months.
