How the heating actually works

We use a specific Nichrome alloy because it doesn’t flake or oxidize when things get hot. That means your elements won’t just burn out after a few weeks of heavy cycling. Plus, we can tweak the length and wattage to fit your specific oven. If your edges are still too cool, we just bump up the wattage per centimeter. Simple as that.
A few things to watch out for
Now, this isn’t a magic wand. High-density IR heating changes how your oven behaves. Because these heaters kick in almost instantly, you’ll need to keep an eye on your timers. If you crank up the wattage but leave your conveyor speed as it was, you’re going to scorch the crust before the middle is even cooked. You’ll want a control system that can handle fast-switching cycles. That’s the only way to keep that surface temperature steady and get a consistent bake across the whole tray.
